For something different while on the road, you can make a yummy Shephard’s Pie with ingredients that don’t require refridgeration – except the ground beef, of course!

Most RV’s have storage for canned/boxed food. When planning on what to take on your trip, why not have a few things in stock to make something different than bar-b-queing everything. Especially if it’s a cold or rainy day.

Everyone has different recipes for this – lots of variations – but here’s what we do:

Ingredients:

1# ground beef

1/2 (or more) chopped onion

1 large can vegetable beef soup

1 can of beef gravy

1 pouch instant mashed potatoes

1 can corn (or other canned veggie)

Instructions:

Begin browning the ground beef. When 1/2 way done add the chopped onion. Cook until the meat is cooked through and onion is soft. Be sure to take out the grease – we always have a grease can in the freezer to keep things neat.

Once the meat is cooked and grease taken out – add the can of soup. Put a lid on the mixture and let it cook for … hmmm … how hungry are you? … maybe 1/2 – 1 hour. What you’re doing is trying to get all the flavours blended and the soupy part reduced a bit.

 

 

 

 

Then add the gravy and heat through.

In the meantime, drain and put the canned veggies in the bottom of an oven-proof dish. Top this with the meat/soup/gravy combination. Top it off with the mashed potatoes – cooked to the package instructions.

 

 

 

 

 

 

 

When all put together, pop it in the oven and cook for … 1/2 – 1 hour. You only want to really heat it up as it’s mostly already cooked.
