There are so many Caesar Salad recipes out there. I got the basic recipe for this salad from a restaurant while on the honeymoon of my first marriage.  As a side note, this was the first Caesar salad that I had ever had and I liked it so much I subsequently used it to woo my present wife, Linda, love of my life and partner in crime. But I digress.

We have modified the recipe over the years to suit our tastes. For instance, it originally had anchovies, but that is one of things we have cut out. Feel free to add them back if that turns your crank. We have also significantly upped the amount of fresh garlic in the dressing. Prepare for a garlic rush! We love lots of garlic, we love the taste – and it keeps vampires at bay! Again, feel free to cut back or add more depending on your tastes and how bad the vampires are where you live.

OUR CAESAR SALAD
1 – 2 heads of fresh romaine lettuce (depending on size) washed & torn
3 Tbsp Oil (some kind of neutral oil)
1 1/2 Tbsp Red Wine Vinegar
1 1/2 Tbsp Balsamic Vinegar
1 Tbsp Worcestershire sauce
Dash hot sauce (!)
1/4 tsp sugar
1/4 tsp lemon juice
1/4 tsp ground mustard
3 – 4 (5?) cloves crushed garlic
1 whole raw egg. (I know, I know. Coddle it if you must but we’ve been doing this for 20 years and haven’t had a problem!)
1 1/2 cups shredded Parmesan cheese (approximately – up to you!)
Croutons

 

 

 

 

 

Mix all together (except Parmesan and croutons!) then pour over lettuce. Add cheese & croutons and mix again.
