I LOVE my crockpot!  You can plop everything in it and set it to cook all day if you want.  You can then come home to a mouth-watering and hearty meal.

  • 3 Tbsp oil
  • 2 medium onions, chopped
  • 1 green bell pepper, chopped
  • 6 cloves garlic, minced (more or less … but we DO love our garlic!)
  • 1/4 cup chili powder
  • 1 Tbsp cumin
  • 2 lbs. ground meat (we use beef but change it up if you want!)
  • 1 1/2 tsp salt
  • 1 – 28oz can diced tomatoes
  • 1 – 14oz can tomato sauce
  • 2 – 15 oz cans kidney beans (or black beans etc.)
  • 1/4 cup either chopped jalapeno peppers, pickled jalapenos, or diced green chillies depending on your level of tolerance for heat!
  1. Heat oil and fry onions and bell pepper; season with salt and cook till softened.
  2. Add garlic, chili powder & cumin.  Stir to coat and cook till fragrant – about 1 minute.
  3. Add ground meat and cook till no longer pink.
  4. Mix the rest of the ingredients in the crockpot then add the cooked meat mixture.  Stir till combined.
  5. Cook for 8 hours on low or 6 hours on high.

Feel free to add whatever you like or have on hand.  I often throw in some chopped carrots, mushrooms, broccoli, etc.  Simply saute them with other veggies before adding to pot.

Serve with grated cheese, green onions and sour cream.  And don’t forget some good, crusty buns to soak up the liquid!  MMmmmmmm!
