Linda’s Irish Cream has been a Christmas tradition in our family for decades.  Around the 1st of December Linda goes shopping to make sure she has all the ingredients ready for this delightful liqueur.  It is great on it’s own, but our favourite thing to do is pour a dollop in our coffee.  We like it better than some of the store bought brands and it’s cheaper too!  Great for sitting around the fire in the evening and certainly a must have on Christmas morning with our Christmas Quiche.

Irish Creme Recipe

1 can  Sweetened Condensed Milk

1 cup Irish Whiskey

1 cup 1/2 & 1/2 Light Cream

3 eggs

1 Tbsp Chocolate Syrup

1/4 cup Coconut Extract (optional)

Any of these ingredients can be modified to suit your tastes.  For example Linda usually adds a bit more chocolate and doesn’t use the coconut extract.

Combine all ingredients in a blender.  We use an old 40oz liquor bottle to store.

Keep refrigerated.
