This quick and easy quiche is also known in our family as the ‘Christmas Morning Quiche’. It is one of my Mom’s recipes and has been a traditional family favourite for many, many years. It is incredibly rich, decadent and delicious, but very easy to make. This was always our Christmas morning ‘go to’ breakfast when I was a kid and it still is, but it doesn’t just have to be for Christmas.

Enjoy this delicious quiche by itself add some hash browns or potato patties to the plate or, as my Mom liked to do at Christmas, serve it with a slice of a Christmas Stollen. Ingredients

1/2 lb Cheddar Cheese – Grated or Sliced (we use sliced, ‘old’ cheddar)
5 Strips Bacon – cook whole then chop into small chunks
3 eggs
1 1/2 Cup 18% (heavy) Cream
1/2 teaspoon Salt
1/4 teaspoon Pepper

Put the cheese on the bottom of an unbaked pie shell. (to keep things simple and fast, we use either a preformed shell or ready made pie dough you can roll out). Sprinkle in the bacon. Make a custard by mixing the eggs, cream, salt and pepper together. Pour the custard into the pie shell. Bake at 400°F for 30-35 minutes.  Let it set for about 10 minutes (if you can!) Enjoy!!
